Thanksgiving is right around the corner!!! Of course I’ve already had two pre-Thanksgiving potlucks..haha..I can’t help it that I love food! This is definitely my favorite holiday. Of course because Its a great reason to get together with friends and family and relax, but also I just love all the varieties of food. Sweet Potato Soufflé is definitely at the top of my list as well as the Stuffing. Oh my goodness stuffing!!! It’s so funny that we usually only end up eating these things on that day of the year even though it’s so easy to make it any other day of the year. I guess that would take away the special tradition of the “Thanksgiving meal”.
I’m always in charge of making the scones, the Pecan Pie, and the green bean Soufflé. This year I am going to try something new that I found online though…try to keep things interesting. It’s called peanut Butter Pumpkin Fudge…. I know right??! Sounds amazing! Hopefully it will taste as good as it sounds! Here is the recipe if you guys want to try it.. I’m not one for being selfish and hiding recipes..
Peanut Butter Pumpkin Fudge
1 cup pumpkin puree
1 cup oat flour (im using whole wheat)
3 scoops cinnamon-flavored protein powder
1/4 cup honey
1 tsp. vanilla
1 tsp. pumpkin spice
(I might add some pecan granola mix in there too..seems like it’d be a yummy addition)
Directions: 1. In a large bowl, combine all ingredients together. 2. Spread mixture into a greased 8×8 in baking dish 3. Freeze then eat!

I’ve always found the idea of “secret recipes” so pointless… I mean, if it’s so amazing, wouldn’t you want to share it with the world? Unless you are planning on becoming a millionaire and starting a business with this secret recipe of yours, I say keep it moving along so that everyone gets a chance to enjoy it and let the recipe live on!
